I’ve lost count of the number of times I’ve made this superbly easy curry, which really does take thirty minutes to cook after a bit of prep work. I usually accompany it with a couple of chapattis.

Lamb desi korma
This is a richly flavoured dish, and nothing like the korma one finds in BIR cuisine. While it has yoghurt as befits a korma, this version has a definite kick to it which it augmented in my cooking with a number of sliced chillies.

Al’s thirty minute chicken chasni
I enjoyed making this dish with its blended onions that give a really nice restaurant-style consistency. Chasni is very much a BIR dish, originating in the curry houses of Scotland.
I should probably not have attempted to serve a red curry in a red bowl and photograph it, but I was pretty hungry at that point
